Twisted Chicken Parm

This is a new take on the old-fashioned Chicken Parmesan. No baking necessary! Take 2 boneless chicken breasts, cut them into chunks. Add 2 tablespoons of olive oil to medium heated skillet. Add chicken, season with 1 tbsp Italian seasoning, 1 teaspoon basil, pinch of salt and pepper. Cook chicken until thoroughly cooked. Once finished, put in a bowl and sit to the side. While chicken is cooking, chop up 3 Roma tomatoes, 2 cloves of garlic. Wash the pan that the chicken was cooked and add the tomatoes, garlic and 4 tbsp of water. Season with salt, pepper and Italian seasoning. Crush tomatoes while cooking on medium heat. This is to make your sauce. This takes about 5 minutes. Boil 6 cups of water with a pinch of salt and add your choice of noodles. In this case, we used bowtie, but you can choose which ever you would prefer. Once the noodles are finished (about 10 minutes) drain well. As you can see, we used Colby Jack cheese for our topping, but once again you can use any cheese you prefer. To put it all together, layer the bottom of your bowl with noodles. Then add your sauce, top that with chicken and for your final touch add your cheese. Voila you have a simple and easy meal that any family would love! Enjoy!
