Thai Stir-Fry

Ingredients:

  • 1 package chicken breast tenders (I use boneless, skinless chicken breast cut into strips or chunks)

  • 1 tbsp olive oil

  • 1/2 cup bell pepper strips (you can use any colors you want)

  • 1 clove garlic, minced

  • 1 tbsp chopped fresh cilantro

  • 1 tsp grated fresh ginger

  • 2 tbsp soy sauce

  • 1 tsp brown sugar

Directions:

  • Heat oil in large skillet over medium-high heat until hot.

  • Cook and stir chicken for about 6 minutes on each side or until golden brown.

  • Add bell peppers, garlic, cilantro, ginger, soy sauce and brown sugar to skillet.

  • Reduce heat to low and cover.

  • Simmer for about 10 minutes, stirring occasionally.

  • Serve over rice or lo mein noodles, if desired.

Makes 4 servings
