Thai Stir-Fry

Ingredients:
1 package chicken breast tenders (I use boneless, skinless chicken breast cut into strips or chunks)
1 tbsp olive oil
1/2 cup bell pepper strips (you can use any colors you want)
1 clove garlic, minced
1 tbsp chopped fresh cilantro
1 tsp grated fresh ginger
2 tbsp soy sauce
1 tsp brown sugar
Directions:
Heat oil in large skillet over medium-high heat until hot.
Cook and stir chicken for about 6 minutes on each side or until golden brown.
Add bell peppers, garlic, cilantro, ginger, soy sauce and brown sugar to skillet.
Reduce heat to low and cover.
Simmer for about 10 minutes, stirring occasionally.
Serve over rice or lo mein noodles, if desired.
